The Kitchen Hearth: Sunday Smoker

Grandpa B headed outside this afternoon to fire up the smoker, armed with a pork roast and apparently absolutely no restraint with the Honey BBQ Rub, along with Cajun-seasoned chicken thighs and a few kitchen experiments. We’re smoking sweet peppers to freeze dry for homemade smoked paprika, Vidalia onions for sweet smoky onion powder, and even four hard boiled eggs.

There’s something truly special about the way a sprinkle of herbs can change a meal. I’ve always believed that cooking is more than just feeding the body, it’s about nurturing the soul and creating moments of comfort.


When you have a large family like ours, cooking from scratch isn't just a trendy fad, it's a necessity to make the food budget go farther. And when everyone has sports, drama, music or Volunteer Firefighting duties, using herbal blends saves time and effort. Instead of measuring out 6 different spices, you have a ready mix that makes dinner taste slow cooked even as you quickly throw it together.


Not all spice blends are created equal. I’ve found that small-batch, handcrafted blends often carry more care and better flavor than mass-produced ones. I can use fresher herbs and avoid fillers or artificial ingredients.


One blend I often reach for is my Rustic Italian Seasoning. It’s a comforting mix of rosemary, thyme, oregano and basil. This blend is perfect for tomato based sauces. We also use it mixed with butter for a quick and easy garlic bread, and on roasted potatoes.


Another favorite around here is the Cajun Seasoning. It combines smoked paprika, oregano, thyme, cayenne, and other bold spices that bring warmth and flavor to everything from fries and chicken to pasta dishes.


To keep your spice blends fresh, store them in airtight jars away from heat and moisture. A cool pantry shelf works beautifully. And remember, a little goes a long way. Start small, taste as you cook, and adjust to your family’s preferences.


Here’s a simple recipe to try with an herbal blend:


10 Minute Pasta Sauce

1 can crushed tomatoes

½ teaspoon granulated sugar

1 teaspoon Rustic Italian Seasoning

1 pound browned ground beef or Italian sausage


Simmer tomatoes, sugar, and seasoning for 10 minutes before adding the cooked meat. Serve over pasta with garlic bread.


To add even more flavor, season the meat while browning with a splash of Worcestershire sauce and an extra sprinkle of Rustic Italian Seasoning. Layering flavors throughout the cooking process gives the sauce a richer homemade taste.


This dish is a perfect example of how a little herbal magic can transform something ordinary into a comforting delight.
