There's something about pancakes that slows a morning down.


Maybe it's the smell of butter on the griddle. Perhaps it's the sound of batter sizzling as it's poured. Or maybe it's the way everyone seems to wander into the kitchen asking, "Are they ready yet?"


The Joy of Pancakes


Around here, pancakes have become one of those simple traditions that everyone looks forward to. They are so easy to make, and I love allowing the little ones to help and learn.


One thing I especially love about this mix is that it makes enough for three batches of pancakes. That means I can keep one here at home, tuck one into our camper for travel days, and still have one ready to share with the kids when they're camping or with a neighbor who could use a little extra kindness.


Sometimes the best recipes aren't the ones we keep. They're the ones we pass along.


A Hearty Mix for Everyone


Made with three different flours—all-purpose, whole wheat, and oat flour—this pancake mix is hearty enough to keep everyone satisfied while still being wonderfully fluffy. One of my favorite things about making pancakes this way is how easy they are to customize. Our grandson always asks for chocolate chips, while Grandpa B reaches for the blueberries. A handful of each goes right onto the batter after it hits the griddle, so everyone gets exactly the pancakes they were hoping for.

Hearty Pancake Mix Recipe


Ingredients


  • 2 cups all-purpose flour

  • 1 cup whole wheat flour

  • 1 cup oat flour

  • 1 cup buttermilk powder

  • 1/4 cup sugar (can use up to 1/3 cup)

  • 2 tablespoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt (optional)


Instructions


  1. Mix the dry ingredients together. Store in an airtight container, stand-up bag, or mylar bag. If using bags, you can portion 2 cups of the mix into individual bags.


  2. To prepare pancakes, mix 2 cups of pancake mix with 1 cup of water, 1 large egg, and 1 tablespoon of oil. Allow the batter to rest for 5 to 10 minutes. This gives the oat flour and whole wheat flour time to absorb the liquid, resulting in lighter, fluffier pancakes.


  3. Heat a griddle and butter it lightly. Ladle pancake batter by 1/4 cups onto the griddle. Add any toppings such as blueberries, sliced strawberries, sliced bananas, chocolate chips, or raisins. Cook until bubbles form and pop. Flip the pancakes and cook until golden brown. Serve with butter and syrup or whipped topping.
